  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup molasses
  • 1/4 cup hot water

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves. Set aside.

  3. In a large bowl, cream together butter and brown sugar until light and fluffy. Stir in molasses.

  4. Gradually add the dry ingredients to the wet ingredients, alternating with hot water, beginning and ending with the dry ingredients. Mix until just combined.

  5. Divide the dough in half and wrap each portion in plastic wrap. Chill in the refrigerator for at least 1 hour.

  6. Roll out the chilled dough on a lightly floured surface to 1/4-inch thickness. Use gingerbread man cookie cutters to cut out shapes.

  7. Place the cutouts onto the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 8-10 minutes, or until edges are lightly browned. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  9. Once cooled, decorate the gingerbread men with icing or candies as desired.
