How To Make Cranberry-Nut Oatmeal Cookies

Ingredients
- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup dried cranberries
- 1/2 cup chopped nuts (such as walnuts or pecans)
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, combine the oats, flour, cranberries, and nuts. Set aside.

In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate small bowl, dissolve the baking soda, cinnamon, and salt in 1 tablespoon of hot water. Add this mixture to the butter mixture and mix well.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
