How To Make Chocolate Caramel Terrine

Ingredients

  • 200g chocolate, chopped
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. In a microwave-safe bowl, melt the chocolate in short intervals, stirring until smooth. Set aside to cool slightly.

  2. In a small saucepan, heat the cream until hot, but not boiling. Remove from heat and set aside.

  3. In a separate saucepan, combine the sugar and water. Cook over medium-high heat until the sugar dissolves and turns into a golden caramel color. Remove from heat and stir in the butter, vanilla extract, and salt until smooth.

  4. Slowly pour the hot cream into the caramel mixture, stirring continuously until well combined.

  5. Gradually whisk in the melted chocolate until smooth and glossy.

  6. Pour the mixture into a loaf pan lined with plastic wrap. Smooth the top with a spatula and cover with additional plastic wrap.

  7. Refrigerate for at least 4 hours, or overnight, until set.

  8. To serve, remove the terrine from the pan using the plastic wrap. Slice into thick slices and serve chilled.
