How To Make Blueberry Cheesecake

Ingredients
- 200g digestive biscuits
- 100g unsalted butter, melted
- 250g cream cheese
- 150g granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 200g blueberries
- 2 tbsp flour
- 1 tbsp lemon juice
Instructions

Preheat the oven to 180°C (350°F).

Crush the digestive biscuits into crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

In a mixing bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, toss the blueberries with flour and lemon juice. Gently fold the blueberries into the cream cheese mixture.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake in the preheated oven for 60 minutes. The cheesecake should be set around the edges but slightly jiggly in the center.

Remove from the oven and let it cool in the pan for 10 minutes. Run a knife around the edge of the pan to loosen the cheesecake. Allow it to cool completely before refrigerating for at least 4 hours or overnight.
