Ingredients

  • 1 cup vegan butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream the vegan butter and powdered sugar together until light and fluffy.

  3. Stir in the vanilla extract.

  4. Gradually add the flour, mixing well after each addition, until a soft dough forms.

  5. Roll out the dough onto a lightly floured surface to around 1/4 inch thickness.

  6. Use cookie cutter or a round glass to cut out the cookies.

  7. Place the cookies onto a baking sheet lined with parchment paper.

  8. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.

  9. Remove from the oven and allow to cool completely before serving.
