  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup molasses
  • 1 egg
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, and salt.

  3. In a separate large mixing bowl, cream together the softened butter and sugar until light and fluffy.

  4. Beat in the molasses, egg, milk, and vanilla extract until well combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove the cake from the oven and immediately sprinkle the mini marshmallows evenly over the top.

  9. Return the cake to the oven and broil for 1-2 minutes, or until the marshmallows are golden and toasted.

  10. Remove from the oven and let cool slightly before serving.
