  • 2 cups fresh corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.

  2. In a blender, blend 1 cup of corn kernels until smooth.

  3. In a mixing bowl, combine the blended corn, remaining corn kernels, flour, cornmeal, sugar, baking powder, and salt.

  4. In a separate bowl, whisk together the milk, melted butter, and vanilla extract.

  5. Pour the wet ingredients into the dry ingredients and mix until just combined.

  6. Pour the batter into the prepared baking dish and smooth the top.

  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let cool for a few minutes before serving.
