Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 7 ounces marzipan
  • Green food coloring
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a round 8-inch cake pan.

  2. In a mixing bowl, beat the eggs and sugar until light and fluffy.

  3. Sift in the flour and cornstarch, then gently fold until well combined.

  4. Pour the batter into the prepared cake pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

  5. Remove the cake from the oven and let it cool completely.

  6. In a separate mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  7. Cut the cooled cake horizontally into two equal layers.

  8. Spread raspberry jam on the bottom layer, then spread a thick layer of whipped cream on top.

  9. Place the second cake layer on top and gently press down.

  10. Roll out the marzipan on a surface lightly dusted with powdered sugar, with a thickness of about 1/8 inch.

  11. Carefully lift the marzipan and cover the cake completely, smoothing it out to eliminate any air bubbles. Trim any excess marzipan.

  12. Divide a small portion of marzipan and add green food coloring. Shape into small leaves and decorate the cake.

  13. Dust the cake with powdered sugar.

  14. Chill the cake in the refrigerator for at least 2 hours before serving.

  15. Slice and enjoy!
