  • 12ozcream cheese
  • 4cupsheavy cream,divided
  • 2tbsplemon juice
  • cupsugar
  • 4cupsstrawberries,diced
  • 15ozNilla Wafers Cookies
  • cuppowdered sugar
  • ½tspvanilla
  • red food coloring,1 drop, optional

Instructions

  1. Cream together the cream cheese, sugar, and lemon juice until soft and fluffy.

  2. Add 3 cups of heavy cream, then beat on medium until thickened and fluffy.

  3. Gently fold the strawberries into the whipped cream mixture.

  4. Place a single layer of vanilla wafers in a 9×13-inch pan.

  5. Top with ⅓ of the cream mixture, then repeat the layers 2 more times.

  6. Combine the remaining cup of heavy cream, powdered sugar, vanilla, and food coloring.

  7. Beat on medium-high until thickened.

  8. Spread the topping over the icebox cake.

  9. Cover and refrigerate the cake overnight.

  10. Top with additional strawberries, serve, and enjoy!
