  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup lemon juice
  • 2 tbsp lemon zest
  • 1/2 cup milk
  • 2 egg yolks
  • 2 egg whites
  • 1/4 cup sugar for meringue

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch round cake pan.

  2. In a large bowl, mix together flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together melted butter, lemon juice, lemon zest, milk, and egg yolks.

  4. Gradually add the wet ingredients to the dry ingredients and stir until well combined.

  5. In a clean bowl, beat egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form.

  6. Gently fold the beaten egg whites into the cake batter.

  7. Pour the batter into the prepared cake pan and smooth the top.

  8. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let cool completely before serving.
