How To Make Jubilee Cake

Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup strawberry jam
- 1/4 cup blueberry jam
- Whipped cream, for topping
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.

Pour half of the batter into the prepared cake pan. Spoon dollops of strawberry and blueberry jam on top of the batter. Swirl with a knife to create a marbled effect.

Pour the remaining batter over the jam layer, spreading it evenly.

Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Once cooled, frost the top of the cake with whipped cream. Decorate with fresh berries if desired.
