Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup molasses
  • 1/4 cup hot water
  • 1 egg
  • for the caramel frosting:
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

  2. In a medium bowl, whisk together the flour, ground ginger, cinnamon, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the molasses, hot water, and egg, and mix well.

  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  6. While the cake cools, prepare the caramel frosting. In a saucepan, melt the butter over medium heat. Stir in the brown sugar and milk, and bring to a boil. Reduce heat to low and simmer for 2 minutes, stirring constantly.

  7. Remove the saucepan from heat and stir in the vanilla extract. Allow the caramel mixture to cool for 10 minutes.

  8. Gradually add the powdered sugar to the caramel mixture, beating until smooth and spreadable.

  9. Once the cake has completely cooled, spread the caramel frosting over the top and sides of the cake.

  10. Slice the ginger cake with caramel frosting and serve.
