Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp chilli powder
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup strong espresso, cooled
  • 1/2 cup whole milk
  • 1/2 cup dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp instant coffee powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

  2. In a bowl, whisk together the flour, cocoa powder, baking powder, salt, and chilli powder.

  3. In a separate large bowl, cream together the butter and granulated sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the espresso and milk.

  6. Fold in the chopped dark chocolate.

  7. Pour the batter into the prepared cake pan and smooth the top.

  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  10. In a mixing bowl, whip the heavy cream until soft peaks form.

  11. Add the powdered sugar and instant coffee powder, and continue whipping until stiff peaks form.

  12. Spread the coffee cream over the cooled cake, using a spatula to create decorative swirls.

  13. Serve the espresso, chocolate & chilli cake with coffee cream and enjoy!
