  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • Devonshire cream (for serving)

Instructions

  1. Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan.

  2. In a large mixing bowl, cream together the butter, honey, and sugar until light and fluffy.

  3. Add the eggs one at a time, beating well after each addition.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with sour cream. Mix well after each addition.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  9. Serve the Devonshire Honey Cake with a dollop of Devonshire cream.
