How To Make Carrot Cake with PHILLY Cream Cheese Icing

Ingredients
- 2 cups of grated carrots
- 1 ½ cups of all-purpose flour
- 1 cup of granulated sugar
- ½ cup of vegetable oil
- 2 eggs
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tsp of ground cinnamon
- ½ tsp of salt
- ½ cup of chopped walnuts (optional)
- PHILLY Cream Cheese Icing:
- ¼ cup of unsalted butter, softened
- 4 oz (½ package) of PHILLY cream cheese, softened
- 2 cups of powdered sugar
- 1 tsp of vanilla extract
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a large mixing bowl, combine the grated carrots, flour, sugar, oil, eggs, vanilla extract, baking powder, baking soda, cinnamon, and salt. Mix well.

If using walnuts, fold them into the batter.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake in the preheated oven for 40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

PHILLY Cream Cheese Icing:

In a mixing bowl, beat the softened butter and cream cheese together until smooth and creamy.

Gradually add the powdered sugar, one cup at a time, and continue beating until well combined.

Stir in the vanilla extract.

Once the cake has completely cooled, spread the PHILLY cream cheese icing over the top.

Slice and serve.
