- 1 medium-sized beet, boiled and pureed
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a mixing bowl, whisk together the beet puree, eggs, sugar, vegetable oil, buttermilk, and vanilla extract until well combined.

In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing well after each addition, until a smooth batter forms.

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
