  • 1 medium-sized beet, boiled and pureed
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a mixing bowl, whisk together the beet puree, eggs, sugar, vegetable oil, buttermilk, and vanilla extract until well combined.

  3. In a separate bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing well after each addition, until a smooth batter forms.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

  8. Once cooled, frost the cake with your favorite frosting or sprinkle with powdered sugar. Serve and enjoy!
