  • 1 cup blackcurrants
  • 1 ¼ cups shredded coconut
  • ½ cup almond flour
  • ¼ cup honey
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a mixing bowl, combine the blackcurrants, shredded coconut, almond flour, honey, melted coconut oil, vanilla extract, and salt. Mix well until the ingredients are fully combined.

  3. Press the mixture into a square or rectangular baking dish lined with parchment paper.

  4. Bake for 25 minutes, or until lightly golden brown on top.

  5. Remove from the oven and let cool completely before slicing into squares.
