Ingredients

  • 4 bolillo rolls (or French rolls)
  • 1 cup refried beans
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 1/2 cup pico de gallo (diced tomatoes, onions, cilantro, and jalapenos)
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Slice the rolls in half lengthwise and place them on a baking sheet.

  3. Toast the rolls in the preheated oven for 5 minutes until slightly crispy.

  4. Spread a layer of refried beans on each toasted roll half.

  5. Sprinkle shredded cheese over the beans and place the baking sheet back in the oven.

  6. Bake for another 5 minutes, or until the cheese has melted and is bubbly.

  7. Remove from the oven and top each mollete with pico de gallo, sliced avocado, and fresh cilantro.

  8. Serve hot and enjoy!
