Ingredients
- 4 bolillo rolls (or French rolls)
- 1 cup refried beans
- 1 cup shredded cheese (such as cheddar or Monterey Jack)
- 1/2 cup pico de gallo (diced tomatoes, onions, cilantro, and jalapenos)
- 1 avocado, sliced
- Fresh cilantro, for garnish
Instructions

Preheat oven to 350°F (175°C).

Slice the rolls in half lengthwise and place them on a baking sheet.

Toast the rolls in the preheated oven for 5 minutes until slightly crispy.

Spread a layer of refried beans on each toasted roll half.

Sprinkle shredded cheese over the beans and place the baking sheet back in the oven.

Bake for another 5 minutes, or until the cheese has melted and is bubbly.

Remove from the oven and top each mollete with pico de gallo, sliced avocado, and fresh cilantro.
