Ingredients
- 8 small flour tortillas
- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can black beans, rinsed and drained
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- Cilantro, for garnish
- Sour cream, for serving
- Avocado, diced, for serving
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, cook the ground beef until browned. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened.

Stir in the black beans, corn, salsa, cumin, chili powder, salt, and pepper. Cook for an additional 5 minutes.

In a greased 9×9 inch baking dish, arrange 4 tortillas on the bottom. Spread half of the beef mixture over the tortillas. Sprinkle with half of the shredded cheese. Repeat with the remaining tortillas, beef mixture, and cheese.

Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes. Garnish with cilantro.

Serve the casserole with sour cream and diced avocado.
