- 4 large poblano peppers
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 4 eggs
- 1 cup milk
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin

Preheat the oven to 375°F (190°C). Grease a 9×13 inch baking dish.

Roast the poblano peppers directly over a gas flame or under the broiler until the skins are blackened and blistered. Place the peppers in a plastic bag and let them steam for 10-15 minutes. Peel off the skins and remove the seeds and stems. Slice the peppers into strips.

Spread half of the sliced peppers in the bottom of the prepared baking dish. Top with half of the shredded Monterey Jack cheese and half of the shredded cheddar cheese. Repeat the layers with the remaining peppers and cheeses.

In a mixing bowl, whisk together the eggs, milk, flour, salt, black pepper, garlic powder, and cumin until well combined. Pour the mixture over the peppers and cheese in the baking dish.

Bake for 35-40 minutes, or until the casserole is set and the top is golden brown.
