Ingredients
- 1 cup of long-grain rice
- 1 can of black beans, drained and rinsed
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1/2 teaspoon of chili powder
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and cook until softened.

Add the minced garlic and cook for an additional minute.

Add the rice to the skillet and stir to combine with the vegetables.

Stir in the cumin, paprika, and chili powder, coating the rice and vegetables evenly.

Pour in 2 cups of water and bring to a boil. Reduce heat to low, cover, and let simmer for about 20 minutes, or until the rice is tender and the water has been absorbed.

Once the rice is cooked, add the black beans to the skillet and stir to combine. Cook for an additional 5 minutes, until the beans are heated through.

Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
