How To Make Vegan Paella

A flavorful and satisfying vegan twist on the classic Spanish rice dish, packed with vegetables and aromatic spices.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup green beans, trimmed and halved
  • 1 cup diced tomatoes
  • 1 cup vegetable broth
  • 1 cup white rice
  • 1 tsp smoked paprika
  • 1/2 tsp turmeric
  • 1/2 tsp saffron threads (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pan or paella pan over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.

  2. Add sliced red and yellow bell peppers, and green beans. Cook for 5 minutes until slightly tender.

  3. Stir in diced tomatoes, vegetable broth, white rice, smoked paprika, turmeric, and saffron threads (if using). Season with salt and black pepper.

  4. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20-25 minutes or until the rice is cooked and has absorbed the liquid. Stir occasionally to prevent sticking.

  5. Remove from heat and let it sit, covered, for 5 minutes to allow the flavors to meld. Fluff the rice with a fork.

  6. Garnish with fresh parsley and serve hot with lemon wedges.
