How To Make Gluten-Free Chicken Enchiladas Recipe
Delicious and flavorful chicken enchiladas made with gluten-free tortillas and topped with a homemade red enchilada sauce.

Ingredients
- 4 gluten-free tortillas
- 2 cups cooked and shredded chicken breast
- 1 cup of shredded cheese
- 1/4 cup of chopped cilantro
- 1/2 cup of diced onion
- 1 can of red enchilada sauce
- 1 tsp of chili powder
- 1/2 tsp of cumin
Instructions

Preheat oven to 375°F.

In a small pan, mix enchilada sauce, chili powder, and cumin and heat over low heat.

Spread a small amount of the sauce on the bottom of an oven-safe baking dish.

Lay each tortilla flat and add a spoonful of chicken, cheese, onion, and cilantro onto each tortilla. Roll the tortilla around the ingredients and place seam side down in the dish.

Pour remaining sauce over the enchiladas and top with extra cheese.

Bake in the oven for 30-40 minutes, or until the cheese is melted and bubbly.
