Ingredients

  • 1 cup long-grain rice
  • 2 tablespoons vegetable oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 2 cups chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Fresh cilantro, for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.

  2. Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.

  3. Stir in the diced tomato and cook for another 2 minutes.

  4. Add the rice to the skillet and cook, stirring frequently, until the grains are lightly toasted, about 5 minutes.

  5. Pour in the broth and add the salt, cumin, and paprika. Stir well to combine.

  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.

  7. Remove the skillet from the heat and let it sit, covered, for 5 minutes.

  8. Fluff the rice with a fork and garnish with fresh cilantro before serving.
