Ingredients

  • 6 slices of bacon, chopped
  • 1 onion, finely diced
  • 4 cloves of garlic, minced
  • 2 pounds of tomatoes, diced
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

  2. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.

  3. Add the diced tomatoes, brown sugar, apple cider vinegar, smoked paprika, salt, and pepper to the skillet. Stir well to combine.

  4. Reduce the heat to low and simmer for 1 hour, stirring occasionally, until the mixture thickens and becomes jam-like.

  5. Remove from heat and let cool slightly. Transfer the mixture to a food processor or blender and pulse until desired consistency is reached.

  6. Stir in the cooked bacon.

  7. Serve warm or chilled. Store in an airtight container in the refrigerator for up to 1 week.
