How To Make Matzo Ball Soup Recipe
A comforting soup dish made with fluffy matzo balls, vegetables, and aromatic broth.

Ingredients
- 2 eggs
- 1/4 cup vegetable oil
- 1/4 cup club soda
- 1 cup matzo meal
- 1 tsp salt
- 1/4 tsp black pepper
- 6 cups chicken or vegetable broth
- 2 large carrots, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- Fresh parsley, for garnish
Instructions

In a medium bowl, whisk together eggs, vegetable oil, and club soda.

Add matzo meal, salt, and black pepper, and stir until well combined.

Cover the bowl with plastic wrap and refrigerate for 30 minutes.

Bring a large pot of salted water to a boil.

Using wet hands, shape the matzo mixture into 8 equal-sized balls and drop them into the boiling water.

Reduce heat to low, cover the pot, and simmer for 20-25 minutes or until the matzo balls are fluffy and fully cooked.

In another pot, heat the broth over medium-high heat.

Add the diced carrots, celery, and onions, and let the soup simmer for 10-15 minutes or until the vegetables are tender.
