Cooking: 1 hour
Total: 1 hour and 15 minutes

Serves:

Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp curry powder
  • 2 cups vegetable or chicken broth
  • 1 lb chicken, beef, pork, or tofu, cut into bite-sized pieces
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, carrots, potatoes, bell pepper, garlic, and ginger. Cook until the vegetables soften, about 5 minutes.

  2. Stir in the curry powder and cook for another minute.

  3. Pour in the broth and bring to a boil. Reduce the heat and let it simmer for 20 minutes, or until the vegetables are cooked through.

  4. Meanwhile, in a separate pan, brown the meat or tofu in a little oil until cooked through.

  5. Add the cooked meat or tofu to the pot with the vegetables.

  6. Stir in the soy sauce, Worcestershire sauce, and honey. Season with salt and pepper to taste.

  7. Simmer for another 10 minutes to allow the flavors to meld together.

  8. Serve the Japanese curry over cooked rice.
