Ingredients

  • 4 egg yolks
  • 1/4 cup sugar
  • 1/4 cup Marsala wine
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Zest of 1 lemon

Instructions

  1. In a heatproof bowl, whisk together the egg yolks and sugar until light and fluffy.

  2. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water.

  3. Gradually add the Marsala wine, vanilla extract, salt, and lemon zest to the egg mixture, whisking constantly.

  4. Continue whisking until the mixture becomes thick and creamy, about 10-15 minutes.

  5. Remove from heat and serve immediately, or chill in the refrigerator for at least 2 hours before serving.

  6. Garnish with a sprinkle of lemon zest or fresh berries, if desired.
