Vegan Indian Tofu Curry Recipe

How To Make Vegan Indian Tofu Curry

A fragrant, creamy and aromatic curry with protein-rich tofu as the star ingredient.

Serves:

Ingredients

  • 1 block of firm tofu, cubed
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp of oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp red chili powder (adjust to taste)
  • 1 can of crushed tomatoes
  • 1 cup of water
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a pan, heat oil and add cumin and coriander seeds, let them splutter.

  2. Add onions, garlic, ginger and sauté until onions turn translucent.

  3. Add the spices (turmeric, garam masala, chili powder) and sauté for a minute.

  4. Add the crushed tomatoes and cook for 5 minutes.

  5. Add 1 cup of water to adjust consistency and bring it to a boil.

  6. Add the cubed tofu and mix well. Cover and cook for 10 minutes.

  7. Garnish with coriander leaves and serve hot with steamed rice or naan.
