How To Make Gigantes Plaki

Ingredients
- 2 cups giant beans, soaked overnight
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 red bell pepper, diced
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

Drain the soaked beans and rinse them well.

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, celery, and red bell pepper. Saute until vegetables are tender.

Stir in crushed tomatoes, tomato paste, oregano, thyme, salt, and pepper.

Add the soaked beans to the pot and enough water to cover them. Bring to a boil, then reduce heat to low and let it simmer for about 1 hour or until beans are tender.

Preheat the oven to 350°F (175°C).

Transfer the cooked beans and sauce to a baking dish and bake for 30 minutes, or until the sauce thickens and the top is golden.

Serve the Gigantes Plaki hot or at room temperature.
