  • 1 sheet of puff pastry
  • 1 cup of strawberries, hulled and sliced
  • 1 cup of vanilla pastry cream

  • 1 tsp of lemon zest
  • 1 tsp of lemon juice
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Roll out the puff pastry sheet and cut it into 4 equal rectangles. Place them on the prepared baking sheet and prick the surface with a fork.

  3. Bake the puff pastry rectangles for 20-25 minutes, or until golden and puffed. Remove from the oven and let them cool completely.

  4. In a bowl, combine the strawberries, lemon zest, and lemon juice. Stir gently to combine and let it sit for 10 minutes to allow the flavors to meld.

  5. To assemble the gâteau, place one puff pastry rectangle on a serving plate. Spread a layer of pastry cream on top.

  6. Arrange a layer of strawberry slices on the pastry cream, covering the entire surface. Repeat the layers with the remaining puff pastry rectangles, pastry cream, and strawberries.

  7. In a small saucepan, melt the granulated sugar over medium heat until it turns into a golden caramel. Be careful not to burn it.

  8. Carefully drizzle the caramel over the top layer of strawberries, allowing it to drip down the sides of the gâteau.

  9. Garnish with fresh mint leaves and refrigerate for at least 1 hour before serving.
