How To Make Fragrant Chicken, Coriander & Coconut Curry
This fragrant chicken curry is infused with the flavors of coriander and coconut, creating a delicious and aromatic dish.

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1/2 tsp chili powder (adjust to taste)
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- 1 cup fresh coriander leaves, chopped
- 2 tbsp vegetable oil
- Salt, to taste
- Cooked basmati rice, for serving
Instructions

Heat the vegetable oil in a large, deep skillet over medium heat. Add the onions and cook until soft and translucent.

Add the garlic and ginger to the skillet and cook for an additional 2 minutes.

In a small bowl, combine the curry powder, turmeric powder, cumin powder, and chili powder. Mix well.

Add the chicken to the skillet and cook until browned on all sides.

Sprinkle the spice mixture over the chicken and stir to coat evenly.

Pour in the coconut milk and chicken broth, stirring to combine. Bring to a simmer and cook for 30 minutes, or until the chicken is cooked through and the sauce has thickened.
