Ingredients

  • 8 eggs
  • 1 tsp salt
  • 1 cup thinly sliced vegetables (such as carrots, cabbage, and onions)
  • 1 cup cooked and seasoned ground meat (such as beef or pork)
  • 1 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • Cooking oil, for frying

Instructions

  1. In a bowl, whisk together 4 eggs and salt.

  2. Heat a non-stick pan over medium heat and lightly oil it. Pour a ladleful of the egg mixture into the pan and swirl it to coat the bottom evenly. Cook until the egg crepe is set. Repeat with the remaining egg mixture to make 4 crepes. Set aside.

  3. In the same pan, heat sesame oil over medium heat. Add the vegetables and stir-fry for 2-3 minutes until they are slightly softened. Add the cooked ground meat and stir-fry for another 2 minutes. Set aside.

  4. Place one egg crepe on a clean surface. Spread a spoonful of the vegetable and meat mixture on top of the crepe. Roll it tightly and slice it into bite-sized pieces. Repeat with the remaining crepes and filling.

  5. In a small bowl, whisk together the remaining 4 eggs, soy sauce, and rice vinegar.

  6. Heat a little cooking oil in a non-stick pan over medium heat. Dip each egg roll into the egg mixture and fry until golden brown on all sides. Repeat with the remaining egg rolls.

  7. Serve the Korean Mandu (Egg Rolls) hot with your favorite dipping sauce.
