Ingredients

  • 2 cups rolled oats
  • 1 cup raw mixed nuts (almonds, pecans, cashews)
  • 1/2 cup unsweetened coconut flakes
  • 2 tbsp maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 325°F.

  2. In a large bowl, mix together oats, mixed nuts, and coconut flakes.

  3. In a small bowl, whisk together maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt.

  4. Pour the wet ingredients over the dry ingredients and mix thoroughly.

  5. Spread mixture evenly on a baking sheet lined with parchment paper.

  6. Bake for 20-25 minutes, stirring occasionally, until golden brown.

  7. Let cool completely before serving or storing in an airtight container.
