Ingredients

  • 4 lbs pork shoulder
  • 1 cup orange juice
  • 1/2 cup lime juice
  • 1/2 cup garlic, minced
  • 1/4 cup olive oil
  • 1 tbsp cumin
  • 1 tbsp oregano
  • Salt and pepper
  • Lime wedges, for serving

Instructions

  1. Preheat oven to 325°F.

  2. In a large baking dish, combine orange juice, lime juice, garlic, olive oil, cumin, oregano, salt, and pepper.

  3. Add pork shoulder to the marinade, turning to coat.

  4. Cover with foil and roast in the oven for 3 1/2 to 4 hours, or until pork is tender and easy to shred.

  5. Serve with a squeeze of fresh lime juice and additional salt and pepper to taste.
