Ingredients

  • 1 pound fresh crab meat
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/4 tsp cayenne pepper
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.

  2. Add onion, celery, and garlic. Cook until vegetables are soft.

  3. Add flour and stir constantly for 2 minutes to form a roux.

  4. Slowly whisk in seafood stock and bring to a boil. Reduce heat and let simmer for 20 minutes.

  5. Add crab meat, cream, cayenne pepper, thyme, salt and pepper to the pot. Cook for an additional 10-15 minutes, stirring occasionally.

  6. Use an immersion blender or transfer to a blender and puree until smooth. Serve hot.
