How To Make Corner Bakery’s Apple Walnut Pancakes
Warm & fluffy pancakes with chunks of fresh apples and toasty walnuts.
Serves:
Ingredients
- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 eggs
- 2 cups buttermilk
- 1 tsp pure vanilla extract
- 1 cup chopped apples
- ½ cup chopped walnuts
- Unsalted butter, for cooking
Instructions

In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

In a separate bowl beat the eggs lightly, then whisk in buttermilk and vanilla extract.

Make a well in the center of the dry ingredients and pour in the wet mixture, stirring until just combined.

Fold in chopped apples and walnuts.

Heat a griddle or non-stick fry pan over medium-high heat.

Add a small amount of butter and let it melt. Pour ¼ cup of batter for each pancake, and cook until bubbles form on the surface, then flip and cook the other side.

Repeat until all the batter is gone.
