How To Make Corner Bakery’s Apple Walnut Pancakes

Warm & fluffy pancakes with chunks of fresh apples and toasty walnuts.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • 1 tsp pure vanilla extract
  • 1 cup chopped apples
  • ½ cup chopped walnuts
  • Unsalted butter, for cooking

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl beat the eggs lightly, then whisk in buttermilk and vanilla extract.

  3. Make a well in the center of the dry ingredients and pour in the wet mixture, stirring until just combined.

  4. Fold in chopped apples and walnuts.

  5. Heat a griddle or non-stick fry pan over medium-high heat.

  6. Add a small amount of butter and let it melt. Pour ¼ cup of batter for each pancake, and cook until bubbles form on the surface, then flip and cook the other side.

  7. Repeat until all the batter is gone.
