How To Make Clint’s Chicken Enchiladas Recipe

Delicious and satisfying chicken enchiladas with a spicy kick.

Ingredients

  • 2 cups chopped cooked chicken
  • 1 can black beans, rinsed and drained
  • 1 can diced green chilies, drained
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 8 flour tortillas
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine chicken, black beans, green chilies, chili powder, cumin, salsa, salt, and pepper. Mix well.
  3. Warm tortillas in a microwave or on a skillet to make pliable.
  4. Spoon 1/3 cup of the chicken mixture onto each tortilla, roll up, and place seam side down in an oven safe dish.
  5. Pour any remaining chicken mixture over enchiladas and top with shredded cheese.
  6. Bake uncovered in the oven for 25-30 minutes until cheese is melted and bubbly.
  7. Serve hot and enjoy!
