How To Make Spring Chicken in a Pot

Ingredients
- 4 pieces of spring chicken
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups chicken broth
- Salt and pepper to taste
Instructions

Heat olive oil in a pot over medium heat. Add the diced onion and minced garlic, cook until translucent.

Add the spring chicken pieces to the pot and brown on all sides.

Stir in the sliced carrot, celery, dried thyme, and dried rosemary. Cook for 2-3 minutes.

Pour in the chicken broth and bring to a boil. Reduce heat to low, cover the pot, and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and tender.

Season with salt and pepper to taste. Serve hot.
