Ingredients

  • 1 whole spring chicken, about 3-4 pounds
  • 4 cups chicken broth
  • 1 lemon, sliced
  • 4 cloves of garlic, minced
  • 1 onion, sliced
  • 1 cup baby carrots
  • 1 cup baby potatoes, halved
  • 1 cup green peas
  • Salt and pepper to taste
  • Fresh herbs (such as rosemary, thyme, and parsley) for garnish

Instructions

  1. In a large pot, combine chicken broth, lemon slices, garlic, onion, and salt and pepper. Bring to a boil.

  2. Add the whole spring chicken to the pot and reduce the heat to low. Cover the pot and simmer for 30 minutes.

  3. After 30 minutes, add the baby carrots and potatoes to the pot. Cover and simmer for an additional 10 minutes.

  4. Finally, add the green peas to the pot and cook for another 5 minutes, or until the chicken is cooked through and vegetables are tender.

  5. Remove the chicken from the pot and let it rest for a few minutes before carving.

  6. Serve the poached chicken with the vegetables, garnished with fresh herbs.
