How To Make Spicy Chicken with Rice & Beans

Ingredients
- 4 chicken breasts
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1 tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 jalapeno, seeded and minced
- 2 tbsp chopped fresh cilantro
- Lime wedges, for serving
Instructions

In a small bowl, combine cayenne pepper, paprika, garlic powder, onion powder, cumin, salt, and black pepper.

Rub the spice mixture all over the chicken breasts.

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, add diced onion and minced garlic. Cook until softened, about 2-3 minutes.

Add rice to the skillet and cook for 1 minute, stirring constantly.

Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and liquid is absorbed.

Stir in black beans, diced tomatoes, and minced jalapeno. Cook for an additional 5 minutes, until heated through.

Slice the cooked chicken breasts and serve over the rice and bean mixture.

Garnish with fresh cilantro and serve with lime wedges for squeezing.
