How To Make Salsa Chicken Peppers

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of salsa
- 4 bell peppers (any color)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sliced avocado, sour cream, cilantro
Instructions

Preheat the oven to 400°F (200°C).

Slice the tops off the bell peppers, remove the seeds and membranes, then place them in a baking dish.

In a small bowl, mix together the olive oil, chili powder, cumin, salt, and pepper.

Rub the chicken breasts with the spice mixture, then place them on top of the bell peppers.

Spoon salsa over each chicken breast.

Cover the dish with foil and bake for 15 minutes.

Remove the foil and bake for an additional 5 minutes, or until the chicken is cooked through and the peppers are tender.

Serve the chicken and peppers with optional toppings, if desired.
