How To Make No-Cook Chicken Couscous

Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 cup couscous
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine shredded chicken, couscous, cherry tomatoes, cucumber, red onion, parsley, and mint.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the chicken couscous mixture and toss to combine.

Let the salad sit in the refrigerator for at least 10 minutes to allow the flavors to meld.
