How To Make Andouille Sausage and Zucchini Boats Recipe
These boats are packed with flavorful Andouille sausage and fresh zucchini.

Ingredients
- 4 large zucchinis, cut in half lengthwise
- 1 tbsp olive oil
- 1 lb Andouille sausage, diced
- 1 bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese
Instructions

Preheat the oven to 375°F.

Scoop out the seeds of the zucchini halves and place them on a baking sheet.

In a skillet, heat oil on medium heat and sauté the sausage until browned.

Add the peppers, onion, and garlic and sauté for 3-4 minutes.

Stir in paprika, thyme, salt, and pepper.

Divide the sausage mixture among the zucchini halves.

Bake for 20-25 minutes or until the zucchini is tender.

Sprinkle the cheddar cheese on top of each boat and return to the oven for 5 minutes until cheese is melted.
