  • 4 chicken breast halves
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 tablespoon salt
  • 1 tablespoon black pepper

Instructions

  1. Preheat smoker to 225°F (107°C).

  2. Rub olive oil all over the chicken breasts.

  3. In a small bowl, mix together smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper to make a spice rub.

  4. Sprinkle the spice rub evenly over the chicken breasts, making sure to coat all sides.

  5. Place the chicken breasts on the smoker rack and smoke for 2 hours.

  6. After 2 hours, increase the temperature to 275°F (135°C) and continue to smoke for an additional 1 hour, or until the internal temperature of the chicken reaches 165°F (74°C).

  7. Remove the chicken breasts from the smoker and let them rest for 5 minutes before serving.
