  • 4 boneless, skinless chicken breasts
  • 1 cup shredded cheddar cheese
  • 4 oz diced green chilies
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a small bowl, mix together the garlic powder, paprika, cumin, salt, and black pepper.

  3. Season both sides of the chicken breasts with the spice mixture.

  4. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 3-4 minutes per side, until browned.

  5. Transfer the chicken breasts to the prepared baking sheet. Top each breast with a spoonful of diced green chilies, followed by a generous amount of shredded cheddar cheese.

  6. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

  7. Remove from the oven and let the chicken rest for a few minutes before serving.

  8. Garnish with fresh cilantro before serving.
