Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 chorizo sausage, thinly sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 can of diced tomatoes
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt, pepper, and smoked paprika.

  2. In a large skillet, heat some oil over medium heat. Add the chicken thighs and cook for 5-6 minutes on each side until browned. Remove from the skillet and set aside.

  3. In the same skillet, add the sliced chorizo and cook for 2-3 minutes until crispy. Remove from the skillet and set aside.

  4. In the same skillet, add diced onion and sliced red bell pepper. Cook for 5 minutes until softened.

  5. Add minced garlic, dried oregano, diced tomatoes, and cooked chorizo back to the skillet. Stir well to combine.

  6. Return the chicken thighs to the skillet, nestle them into the sauce, and cover with a lid. Cook for 15-20 minutes until the chicken is cooked through and the flavors are well combined.

  7. Serve the chicken and chorizo one-pan dish hot, garnished with fresh parsley.
