How To Make Butter-Roasted Supreme of Chicken with Wild Mushroom & Potato Gratin

Ingredients
- 4 chicken supremes
- 4 tbsp butter, melted
- Salt and pepper, to taste
- 1 lb wild mushrooms, sliced
- 4 large potatoes, thinly sliced
- 1 cup heavy cream
- 1 cup Gruyere cheese, grated
- 2 cloves garlic, minced
- Fresh thyme leaves, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Rub the chicken supremes with melted butter and season with salt and pepper.

In a large skillet, heat 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook until golden brown. Remove from heat and set aside.

In a greased baking dish, layer the thinly sliced potatoes, cooked mushrooms, and minced garlic. Pour the heavy cream over the top and sprinkle with grated Gruyere cheese.

Place the chicken supremes on top of the gratin.

Roast in the preheated oven for 1 hour, or until the chicken is cooked through and the potatoes are tender and golden brown.

Remove from the oven and let rest for 5 minutes. Garnish with fresh thyme leaves before serving.
