How To Make Simple Goat Cheese and Egg Toasts with Peas and Dill

Take your classic toast recipe and make it fancier with goat cheese. The slightly sweet taste of the cheese complements well with the saltiness.

Ingredients

  • 1slicehearty whole grain bread
  • oz.goat cheesesoftened
  • 1 eggfried, or 2 eggs, scrambled
  • handfulfresh peas
  • fresh dillchopped or mint, chives, parsley or basil
  • sea saltto taste
  • black pepperfreshly ground , to taste

Instructions

  1. Bring a small pot of water to boil for the peas. Toast your bread.

  2. Spread a generous amount of goat cheese on top.

  3. Once the water is boiling, drop in the peas and cook until crisp-tender. Drain the peas and return them to the pot.

  4. If you’re planning to fry your egg, sprinkle your cooked peas onto the goat cheese and gently press down on the peas so they stick.

  5. Prepare your egg as desired. If you’re scrambling the eggs, season the eggs with salt and pepper before cooking, and toss in a handful of peas before the eggs set.

  6. Transfer the cooked egg on top of your goat cheese-covered toast. Top with a slight sprinkle of chopped fresh herbs, salt, and pepper.
