  • 8 spears of asparagus
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Trim the tough ends of the asparagus spears and chop them into small pieces.

  2. In a bowl, whisk together the eggs, milk, salt, and black pepper.

  3. Heat olive oil in a frying pan over medium heat. Add the asparagus and sauté for 5 minutes until tender.

  4. Pour the egg mixture over the asparagus in the pan. Cook for 3-4 minutes until the edges are set.

  5. If desired, sprinkle shredded cheese over the omelette and cover the pan with a lid. Cook for an additional 2 minutes until the cheese is melted and the center is fully cooked.

  6. Gently fold the omelette in half and transfer it to a serving plate.

  7. Cut into wedges and serve hot.
